The long-tail Ruby Snapper has a brilliant sweetness with a perfect flaky texture. It is at the top of the Snapper realm in terms of being table fare, the meat is light, sweet, flakey, gleaming white. The short-tail Ruby Snapper has similar characteristics, the meat is more brownish.
