Loligo - Pusit

In the Philippines Squid, which is locally known as Pusit, is mainly caught by squid traps in coastal areas. A unique feature of squids is that their populations tend to increase after demersal fish stocks, such as grouper and snapper, have been depleted. This is due to the fact that demersal fish feed on squid eggs, which are laid on ocean bottoms.

    - Has a mild, slightly sweet, and almost nutty flavor
    - Often firm and chewy, but not rubbery

    - Can be served raw as in Korea
    - Can be used for sushi, sashimi, and tempura
    - Also good grilled, stuffed, covered in batter, stewed in gravy and served in stir-fries, rice, and noodle dishes
